When life gives you lemons


When life gives you lemons, squirt them on your apples and make pie!
One of our friends has the daunting task of remolding an old home from top to bottom and this weekend Josh is helping him make their laundry room critter proof. I rarely remember details about our friend's likes and dislikes and have even saved those silly emails about fav. movies and such to review periodically to help me out. Yesterday though my brain had a hiccup and reminded me that Jason loves fruit pies. His wife Marianne does not, but she is out of town so tonight we shall feast! Jason is from Iowa, where Rhubarb is a staple and so in addition to the apple pie I also made a Rhubarb/Strawberry Pie.

The apple pie recipe was one my sister found and generously shared with me.
Filling
1 cup sugar
1 cup sour cream
1/2 cup all -purpose flour
1 egg
2 tsps vanilla extract
6 large tart apples, peeled, cored, and sliced

1 unbaked 9-inch deep-dish pie shell

Preheat the oven to 400. Blend the sugar, sour cream, flour, egg, and vanilla extract until smooth. Mix in the apples and pour filling into the pie shell. Save topping for last 5 minutes of baking. Bake the pie for 45 minutes.

Topping

1/2 cup (1 stick) unsalted butter

1 1/2 cups chopped walnut pieces

1/2 cup sugar

3/4 cup all-purpose flour

1 Tblsp ground cinnamon

1/2 cup packed brown sugar

Mix all ingredients together. Sprinkle evenly over the baked pie and bake for 5 additional minutes. Makes one 9 -inch single-crust pie.

You are one of my new role models! I took that 1930's quiz and I am half the woman you are according to them, scoring "poor." My poor self-esteem! I told my husband and as usual he was supportive and said "I don't want a 1930's wife, I want the one I have." Thank goodness for that!

Meanwhile, Arthur took the test and I agreed with all his answers. He is a "very superior" 1930's husband scoring a 131!
